If you need something spicy, citrus-y and crunchy for a summer lunch or dinner, look no further than papaya salad! This Thai-style “pounded salad” is thrown together in a clay mortar and pestle and then served alongside sticky rice and, frequently, marinated chicken that’s butterflied and cooked whole over a grill.

This will be a hands-on class in making papaya salad, starting from grating the green papaya and creating the dressing through choosing your heat level with Thai chiles and pounding it to combine all the flavors. Garlic, lime, tomato, peanut, and grated carrots are traditionally part of this salad, but your instructor, Nathan, will guide you through making a dish that works for your tastes. You’ll also peel local North Carolina shrimp, as you learn the keys to making “gai yang”, the marinated whole chicken that will be the crispy and juicy accompaniment to your salad. Expect to be full after this class!

Cost: $75 per individual ticket; $140 for pair of tickets
